What the label does not say
- Nearly 10% fat in a wheat tortilla, half of it saturated: wheat has almost none, it is the shortening added to the dough. Tortillas made with oil have a different fat profile, hence the value of reading the ingredients.
- In Canada, a flour can be called “whole wheat” even if up to 5% of the kernel (mostly the germ) has been removed; “whole grain whole wheat flour” is the most complete wording (Health Canada).
Preparation
Warmed dry in a pan or in the oven, it takes on nothing; fried into chips or a shell, it soaks up oil.
To mention to a professional
- It contains gluten (wheat).
- Some tortillas are made with lard rather than vegetable shortening, which matters if you avoid animal products or pork; the ingredient list says so.
