What the label does not say
- Despite its name, buckwheat is not related to wheat and contains no gluten: it is the seed of a plant in the rhubarb family, not a cereal grain.
- “Kasha” refers to buckwheat that has been roasted before cooking, giving it a more pronounced nutty taste; unroasted buckwheat tastes milder, and its nutritional value changes little between the two.
Preparation
It cooks like rice, in about twice its volume of water, with no soaking needed.
