What the label does not say
- Couscous is not a grain but a pasta: durum wheat semolina rolled into granules. The matched USDA reference is regular couscous (refined semolina); the whole wheat version brings more fibre, so read the label.
- One cooked cup covers 80% of the daily value for selenium, but that content depends on the soil the wheat grew in: North American wheat is generally rich in it, something no table can state.
Preparation
Couscous absorbs the liquid it swells in: made with a store-bought broth, it takes on its sodium (often several hundred mg per cup), which the table, calculated with water, does not show.
To mention to a professional
- Made from durum wheat, it contains gluten.
