What the label does not say
- Unlike cider or wine vinegar, which brings almost none, balsamic brings sugar: about 2.5 g and 14 calories per tablespoon.
- 'Balsamic vinegar of Modena' (PGI) is a blend of cooked grape must and wine vinegar in which caramel colouring is allowed; the 'traditional' (PDO) is cooked must aged at least 12 years. Price and label tell them apart, not colour.
Preparation
Reduced over low heat, balsamic vinegar concentrates its sugar: a homemade reduction from ordinary balsamic avoids the added sugar of commercial glazes, but the grape sugar remains. Added raw at the end, it keeps all of its aroma.
To mention to a professional
- Sulphites are among Canada's priority allergens; their presence is declared on the label from 10 parts per million.
