Values per serving, calculated from typical label values: this food has no equivalent in the USDA database.
What the label does not say
- Seitan is wheat gluten, nearly pure: out of the question with celiac disease or a wheat allergy, and off the table on a gluten-free diet.
- No USDA entry matches it: the figures come from labels and vary from one brand to another, especially sodium, because store-bought seitan often simmers in a soy-sauce broth. Read the label.
Preparation
Made at home from vital wheat gluten flour, you control the sodium. Poach it at a simmer rather than a rolling boil, which makes it spongy.
To mention to a professional
- Wheat is a priority allergen in Canada, and gluten is excluded with celiac disease; if in doubt, consult.
