What the label does not say
- Two clementines cover about 80% of the Daily Value for vitamin C; eaten at the same meal, that vitamin C increases the absorption of non-heme iron from legumes, grains and leafy greens.
- Pectin (a soluble fibre) is concentrated in the membranes and the white part of the segments; citrus juice keeps barely a trace of it, while the whole fruit provides more than 1.5 g per 100 g.
Preparation
Clementines are eaten raw, so the vitamin C stays intact. Juiced, they lose their fibre and the vitamin C slowly oxidizes in the air: drink the juice soon after squeezing.
